Blending bourbons from different stills, ages & mash bills- creating a unique roundness & depth not found in traditional bourbons. Each numbered batch brings out a slightly different expression of whiskey. Favors of leather, oak, caramel, vanilla, citrus, apple, nutmeg.
Wheated bourbons have become popular for their soft flavors & easy palette. We use a blend of 59% corn, 29% wheat & 12% malted barley for an older flavor profile where malt was needed in heavier amounts. The wheat is also high, for a light soft palette. A note of caramel with bread & dried fruit with a hint of vanilla
The hillside vineyards in the Stag’s Leap district of California’s Napa valley produce some of the most incredible & complex wines in the world. We had to use a barrel from one of the top producers to finish our bourbon. Caramel, cherry, vanilla, and oak are what come through.
Oler Tawny ports typically have flavors of dried fruit and leather so we thought it would be a nice addition to the vanilla and caramel in the bourbon
Barbados is home to some of the best rum in the world. We get barrels of 6 year-old sugar cane rum & use it to finish our rye. The result is a slightly spicy whiskey with beautiful tropical fruit flavors.

Much like many Highland & Speyside Single Malt Scotches do, we take Straight American Single Malt Whiskey and put it into a Oloroso Sherry cask to finish it off. American malt is typically more grassy than Scottish malt, which plays really well with the sherry. The sherry brings nutty, toasted, and dried fruit notes to the grassy malt.
We cut this to 84 proof to really showcase the softer side of Kona coffee. Kona has beautiful soil & weather, & the coffees have less acidic & burnt flavors after roasting . We add whole roasted beans from Palani farms in Kona, Hawaii where the beans are grown roasted & shipped in vacuum sealed pouches to us where we add them whole bean with our bourbon. The velvety cocoa flavors of the coffee come through on the finish.
100% pure Madagascar Vanilla is taken & placed in a barrel with Bourbon, where it sits & marries. The vanilla is considered the best vanilla available and brings a slight baking vanilla flabor to the finish of the bourbon.
